Mother Nature is helping me on my challenge
Stepping into my day as I get out of my bed this morning and have to remind myself where I am with the challenge and set the mantra for the day. Refuse, Reuse, Repair, recycle and rot. How will today go Day 2. Spent some time today after my breakfast and did some meal planning, going through the store cupboard seeing what I have in stock and incorporating it into the recipes. I know one thing I can do is go shopping without a list and come home with food that I already have in the cupboard.
Mantra Planning and getting organised for the week.
As modern living is geared to fast food, less time to plan and cook ahead, grabbing the quick fix pizza dinner and then regretting the choice. Often unhealthy, overpriced and often over packaged.
Not my option for the next 30 days!!!
So today I got ahead and cooked a vegan curry, three portions, so two going into the freezer for another meal. My own ready-made dinner, The curry was made without any plastic wrapping on any of the veggies etc. Rice, chickpeas from https://www.realfoods.co.uk
I got out in nature today as finding this life style is guiding nature to my day and so walked around my garden and picked herbs, salad, and some veg from my mini veg patch. We can all grow some herbs, salad in pots and costs nothing just a bit of TLC and patience.
My new bike bought a new addition to my lifestyle. I have been wanting a new bike and a win on the Premium bonds gave me my bike and so happy. Will reduce my petrol, and carbon footprint. Hoping to use it twice a week to my class saving 14 miles a week I worked it out with the tax allowance for biking to work and calculation = Approx. £182.00 a year saved and getting fit too.
Day 2 ended with my meditation at the end of the day filled with gratitude that I got through another day.
